Recipe: Chinese Steamed Egg Cake

Chinese Steamed Egg Cake 


  • A bowl of eggs (approx 5 eggs) *cold from fridge 
  • A bowl of caster sugar (120g) *will reduce to 80g next time as 120g was too sweet for my level. 
  • A bowl of Flour (150g) *I used self raising flour but most receipes suggested Cake Flour
  • Pinch of Salt
  • Vanila Extract (optional) 
  • 80 ML F&N cream soda ~~ will add this on my next try 

Method: 
1. Beat eggs with Sugar (one by one would be better so it is well blended).  To know that is ready, when you bring up the whist, the batter could hold up to 3 seconds then only drop, thats the stage you stop beating. Some reciepes suggest, 2 min slow then high then 2 min slow. 

2. Gently fold in the flour in batches so it is well blended. 

3. Steam in bamboo bowl lay with baking paper (or 8 inch greased tin) for 30mins high heat
